Brothers Frédéric and Camille Chartier opened it in 1896 as a «bouillon», a cheap canteen for workers, at 7 rue du Faubourg-Montmartre. The great Belle Époque dining room, with mirrors, brass coat racks above the tables and globe lamps, is a listed historic monument.
Waiters in black waistcoats and white aprons write your order and bill straight onto the paper tablecloth. The menu is simple French cooking at very low prices: eggs mayonnaise, leeks vinaigrette, snails, steak frites or duck confit.
