Sausage stands, Würstelstände, are a Viennese institution, and Bitzinger's on Albertinaplatz, next to the Opera, is the best known. It stays open very late, so opera-goers in evening dress mix with people heading home from a night out.
The star is the Käsekrainer, a smoked sausage studded with cheese that melts as it grills. It comes sliced with sweet or hot mustard, gherkins and a hunk of bread. There's also Bratwurst, Burenwurst and the Bosna, Salzburg's hot dog.
