In 1832 Franz Sacher, a 16-year-old kitchen apprentice, created a chocolate cake with a layer of apricot jam for Prince Metternich. His son Eduard opened the Hotel Sacher opposite the Opera in 1876, and the cake became a symbol of Vienna.
For years the hotel and the Demel confectioner went to court over the right to call it the original, and the courts sided with Sacher. In the red-velvet café hung with portraits, it comes with unsweetened whipped cream.
