Open since 1725 on Calle de Cuchilleros, next to the Plaza Mayor, it is recognised by Guinness World Records as the oldest restaurant in the world still operating. It keeps its original wood-fired oven, which the house says has never gone out since.
It is a Castilian roast house: the speciality is oven-roasted suckling pig and lamb. The dining rooms spread over several floors, and the most sought-after are in the cellar, a vaulted cave below ground. It appears in Hemingway's novel The Sun Also Rises.
