The Plachutta family made Tafelspitz, the boiled beef Emperor Franz Joseph ate every day, the speciality of their Wollzeile restaurant. It's served in the copper pot it was cooked in, with the meat, vegetables and broth.
The ritual is to drink the broth first, with noodles or a dumpling, then spread the bone marrow on toasted bread, and finally eat the beef with apple-horseradish, chive sauce and sautéed potatoes.
